This is a simple lunch or light dinner recipe.
Filled with fresh ingredients, as always, it is refreshing and full of flavour.
It requires small amounts of preparation and it has a fast cooking time.
Green Beans, Tiger Prawns, Baby Courgettes, King Soba's Pumpkin - Ginger - Rice Noodles, Shallot, Oil, Free-From Soya Sauce, Ginger, Garlic, Parsley, Chilli, Pistachios.
How to cook it:
Take a wok or a flat pan and add sliced baby courgettes, one chopped shallot, one chopped garlic, previously half-steamed green beans, chopped ginger, parsley, a fistful of pistachios, a small amount of oil, and about 2 tbsp of free-from soya sauce.
On the side bring a pot of water to boil and cook the rice noodles. Once ready, drain and add to the sauce which should be nearly ready by now. Add also the king prawns. Stir fry everything until the prawns are cooked (around 1 minute). If it starts sticking to the pan feel free to add a tiny bit (not more than 1tbsp) of boiling water.
