FF Chocolate Brownies

It's the weekend, and what better way to spend it then baking delicious treats.
Introducing the all time favourite, now completely FreeFrom ofcourse, Chocolate Brownies!

Ingredients:
1 cup of Almond Butter, 1/3 cup of Maple Syrup, 1 egg, 2tbsp dairy free butter, 2tsp vanilla essence, 1/3 cocoa powder (DF!), 1/4 gluten free baking powder, 1/4 gluten free bicarbonate soda.

How to Bake It:
Pre-heat the oven to 180 degrees. 
Whisk the almond butter, maple syrup, egg, DF butter and vanilla essence in a bowl until smooth. Then with a large spoon stir in the cocoa powder, GF baking powder and GF bicarbonate soda. Stir it all in and mix well then lay out in a dish for baking. Cook for 20-25 minutes depending on how gooey you prefer them in the middle. Take out, leave to breathe for 15 mins, serve warm and Enjoy!

Today we have one of my favourite juice and smoothie bloggers: @freshsqueezedjuice.
Here is a recipe they posted, I tried it and it tastes amazing.

Ingredients:
Strawberries, Blueberries, Raspberries, Coconut Milk, Oats.

How to make it:
Blend all the fruit together, adding enough coconut milk to give it the perfect texture.
Place a handful of oats in your bowl, before pouring the smoothie on top.

@beautyfood4you - Quinoa Pizza Bites

Hello and welcome back to my weekly Guest Bloggers!

This week it is my great pleasure to share with you a greatly creative blogger: @beautyfood4you. 
I came across this Quinoa/Italian fusion recipe and my hunger levels were seriously raised. 
I just had to try it! 
And it was SO good. 

A perfectly light version of a pizza mix but gluten-free. It is exactly what I needed on a Sunday.

Ingredients:
2 cups cooked quinoa
2 large eggs
1 chopped onion
2 tbs minced garlic
1/2 cup fresh basil, chopped
[1 cup chopped pepperoni slices] *to not add for a vegetarian option.
1/2 tsp salt
1 tsp paprika 
1 tsp crushed oregano
Pizza sauce for dipping


How to cook it:
Preheat oven to 350 degrees.
Mix together all ingredients, except pizza sauce, in a medium mixing bowl. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping tbs each), and press down gently to compact. Bake for 15-20 mins. Enjoy! x

M&S Gluten-Free Chocolate Torte


Rich and indulgent, this torte will delight the tastebuds of chocolate lovers everywhere.

A gluten-free and dairy-free recipe makes it the perfect after-dinner treat for coeliacs too.




Ingredients

200g unsalted butter
200g dark chocolate, 70% cocoa solids, broken into pieces
5 free-range medium eggs
200g caster sugar
A few drops of vanilla extract
100g ground almonds
cocoa powder, for dusting


How to Bake it:

Preheat the oven to180°C/fan 160°C fan/gas 4. Butter and line the sides and base of a 20cm spring-form or loose-bottomed tin.

Gently melt the butter and chocolate in a pan, stirring until smooth.

Using an electric whisk beat the eggs and sugar for 5 minutes until billowy and the thickness of pouring custard.

Whisk the warm chocolate mix into the egg mix; add a few drops of vanilla. Then, using a large metal spoon, carefully fold in the ground almonds.

Pour into the prepared tin, bake for 35-40 minutes or until set with a light crust. Leave to cool in the tin until warm then carefully transfer to a serving plate. Dust with cocoa powder and Enjoy!
